Con surriempimenti/sovrariempimenti non ho trovato riscontri per questo settore specifico. Presumo che nel settore stampa-tipografia si utilizzi un altro termine specifico. Qualcuno lo sa?

non ne sono sicura del 100%, ma esiste la sovrascansione e la sottoscansione anche in riguardo alla TV. La "Überfüllung" ha qualcosa a che fare con l'esattezza di registro nella tipografia, guarda qui:
