I don't think it's really necessary to include "in its own sauce" for the squid so you could also say:

monkfish/squid in ink sauce

I've come across this several times in menus and I never use the possessive pronoun ('its' or 'their') as it doesn't sound particularly appetising. Does it really matter if the ink came from that particular squid? Not really.
You can also use 'calamari' for 'squid' and 'black ink' for 'ink'
