Italian term

Cilindrare 5/6 volte e passare alla formatrice

Italian to English Other Food & Drink breads
This is from a technical sheet of a product designed for use in bakeries. The terminology suggested by the customer is "Sheet the dough 5/6 times and put in the moulder".
I need to know if this terminology is correct in American English.
Basically, it means to put the dough through this machine, the dough sheeter, 5 or 6 times.
Thank you!

youtube! maybe something like 'roll the dough through the sheeter': see

except that it seems to imply you have to do something manual, beyond setting a value.

Cilindrare significa passare la pasta nel cilindro. Sounds like it could be a pasta machine.

(form the dough) into a cylindrical shape 5 or 6 times, and put it into the moulder

i think you could just say 'knead the dough 5 or 6 times, then put it in the molder/former'

are you making small loaves of bread, or pastries??
Note from asker:
It's a technical sheet for mixes to make bakery products. They're making breads and cookies mainly. Thanks!
