In Ordbog over det danske sprog they give this definition:
"læren om, reglerne for digte- kunsten; ogs. om en vis opfattelse af digtningens væsen, digterens kald og stilling osv"
So the English equivalent to "poetik" would be "poetics" i.e. the art of writing poetry and poetic theory or practice - and in this case the term seems to be used in relation to the "film language" used in Jørgen Leths films, hence the quote below.
