Granulated Sugar
produced directly from crystalization of the syrup; it forms fairly coarse crystals. It is the most common variety for general use.

Caster(Superfine) or fine sugar
this can be made from crushed and sieved granulated sugar, but in Britain it is mostly boiled to a small crystal
size

disagree David Sirett : Granulated sugar is "sucre cristallisé" in France (packet in my cupboard). "Sucre semoule" or "sucre en poudre" is caster sugar. "Sucre glace" is icing sugar (UK), confectioner's/powdered sugar (USA).

agree Mark Nathan : when I worked in restaurant in Paris we used sucre en poudre for cooking which was caster sugar; sucre glace was icing sugar and sucre semoule was just basic granulated sugar for the staff coffee.

Le sucre semoule est surtout vendu en Australie et en Europe. Les sucres vendus au Canada sous les noms français de sucre super fin, sucre de fruit, poudre de fruit, sucre en poudre et sucre à dissolution instantanée, ou sous les noms anglais de super-fine sugar, fruit sugar, fruit powder, powdered sugar et instant dissolving sugar, peuvent être utilisés comme substituts du sucre semoule.
Alors que plusieurs auteurs considèrent les termes sucre semoule et sucre en poudre comme étant des synonymes, certains établissent une distinction. Selon ces derniers, les grains du sucre semoule seraient plus gros que ceux du sucre en poudre.

Is it `caster sugar\' or `castor sugar\'?

Both are right. The spelling castor sugar used to be the prevailing one, but caster sugar seems to be more usual now, perhaps because it is used by some sugar manufacturers on their packaging.
