دهون محدودة شحوم محدودة
I prefer the word (دهون) unless you are talking about a person and his body so you may be able to use (شحوم).

about the word (high-fat) ,
it can be one of 2
1- he is talking about the amount of the fat
2- there are many types of fat, ex. : (high density) and (low density)
anyway, I guess he is talking about the second point , which will (دهون عالية الكثافة محدودة) , this is what I bilieve,
