Italian to English Other Food & Drink Cheese
I'm translating a website for a company that makes cheese-based products and cheese analogues.
They're talking about the ways their products can be customised, and one option is "tenacia ed elasticità".

The others are appearance, consistency and texture when hot.

I've only come across one vaguely reliable article which uses the term "tenacity" about cheese.
"The mixed casein forms powder was associated with the highest span and tenacity."

It is however used a lot in connection with bread dough, for example:

"A solid relationship or connection exists between tenacity and elasticity. Elastic dough will naturally resist the stretching action, and dough with a lot of tenacity has the tendency to retract to its initial position very quickly."

Firmness “Firmness” is often mentioned together with “elasticity” when discussing cheese.

Interesting! That's interesting, thanks for sharing! I had just presumed it was to do with its texture and consistency, given its pairing with "elasticity" in the text. I've also come across "tenace al taglio":

"Fatto con latte ovino delle campagne nocesi e stagionato per oltre 30/40 giorni, il nostro pecorino è un formaggio dalla struttura compatta, tenace al taglio e di colore leggermente paglierino."

I can't cut and paste this, but if you look at the sixth cheese from the bottom you'll see another example of the word. I wonder if it means intensity, how long the flavour lingers on the palate, since my example implies that some people don't like 'tenacia'.
