sheer-sided = steep-sided, donc + ou - "dont les parois sont abruptes"
Je propose "se dresser" = "être posé verticalement".
"S'élèvent àla verticale" est plus explicite mais...bof...

: Seems to me to rather lose some of the expressive strength behind 'sheer-sided' /Non, pas vraiment, c'est très imagé, fait penser à un navire sur l'océan... les 'sheer sides' du 'SS Titanic', par exemple...

"se dresser" me semble pourtant bien évoquer immédiatement la verticalité. Quant à "emerge, sheer-sided" c'est un peu une formule toute faite.

Not quite sure excatly what is giving you problems here, but it looks as if you might have been parsing it wrongly.
In any event, note that the original EN is flawed (looks almost like a translation from FR in the first place!) — the plural verb 'emerge' anticipates a plural noun, whereas 'granite' is singular, and in any case, is rather odd used like this. I suspect 'granite' is in fact an adjective, but the associated plural noun is missing — perhaps 'outcrops'? Or 'inclusions', if you want to be technical (but that doesn't quite seem to be the register of your document here)!
